Tomato and Basil Bake from the Taste and Tell.  This summer side dish would be great with fish or grilled chicken. The dish takes advantage of garden cherry tomatoes. It's ready in less than 15 minutes.

Open-Faced Tomato Sandwiches with Creamy Cucumber Spread from Southern Living.  During peak summer nights, it's too hot to cook. This take on a cool cucumber-tomato sandwich is perfect.
